Sun-Eaters are artificial lifeforms - living nebula created by the alien Controllers. The Sun-Eaters are unleashed by the Controllers in order to destroy planets deemed by the Controllers to be too "evil" (or too immoral) to continue living. The Sun-Eaters are literally capable of absorbing all of the energy from entire suns and shutting them down, thus dooming the surrounding planets to death.
The name "Sun-Eater" is intentionally similar to "Sin-Eater." The Controllers are obviously motivated by their religious and strongly-held ethical beliefs to create and unleash "Sun-Eaters." They literally use their creations to eat up or destroy the sins of planets.
