Mrs. Smith was the wife of Major Smith, one of the commanding officers on the base where Dewey Drip trained to be a soldier. When Dewey Drip saw her, he called her "Hogfat," apparently because she was overweight.

Another commanding officer had told Dewey to go to the officer's mess so that Major Smith could assign him to a tent. The "officer's mess" is the mess hall (or cafeteria) where the officers eat. But this is terminology that was unfamiliar to Dewey Drip. When Mrs. Smith, agasp at being called "Hogfat," asked Drip if he knew who she was, he said: "Sho' - ah knows yo 'is th' officer's mess -- an' ah don't wonder they calls yo' thet!"
